Cheesy Egg Roll Ups – such a fun way to make lots of eggs that make great snacks and breakfasts! Feel free to mix and match the fillings and cheese, then get to rolling!

Half sheet pan– 18×13 inches (this is the size listed in most recipes, when it calls for a cookie sheet or baking sheet)

Cheesy Egg Roll Ups – such a fun way to make lots of eggs that make great snacks and breakfasts! Feel free to mix and match the fillings and cheese!

Equipment

  • Half sheet pan (18×13)
  • Whisk
  • Spatula

Ingredients

  • 12 large eggs
  • 2 tbs milk or cream
  • pinch each salt and pepper

OPTIONAL TOPPINGS- choose a few, or skip!

  • Choose the ones you want from the list! **We aren’t choosing too many veggies because the water content can make your roll ups tough to stay rolled
  • 1 cup shredded cheese
  • 6 slices of deli ham
  • 1 cup crumbled bacon
  • 2 stalks green onion

Instructions

  • Preheat oven to 350F.
  • Whisk together eggs, cream, salt and pepper.
  • Generously spray the sheet pan with non stick spray.
  • Place the sheet pan on the oven rack and then pour the eggs into the pan to avoid spillage.
  • You can add your toppings BEFORE you bake, or as soon as they come out, but again remember, not too many or it will be tough to roll up and slice.
  • Bake for about 12-15 minutes until the eggs are all set.
  • Let cool for about 10-15 minutes then carefully roll up and slice.
